For a healthy kick try this delicious green smoothie made with kale, lime, cucumber and mint.


  • 3 kale leaves, centre stem removed
  • 1 Lebanese cucumber, coarsely chopped
  • 1 lime, peeled, coarsely chopped
  • 1 green apple, cored, coarsely chopped
  • 2cm-piece fresh ginger, peeled, chopped
  • 1 mint sprig
  • 1 1/2 cups (375ml) no-added-sugar coconut water
  • Mint sprigs, extra, to serve
  • Lime wedges, to serve


  1. Place kale, cucumber, lime, apple, ginger, mint and coconut water in a blender and blend until very smooth.
  2. Divide between serving glasses. Serve immediately with extra mint and lime.
