  • 2 avocados, cut into 1cm pieces
  • 1 shallot, trimmed, thinly sliced
  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • 1/3 cup chopped fresh coriander


  1. Combine the avocado, shallot, lime juice, oil and coriander in a bowl. season with salt and pepper.
