For the ultimate summer salad you can't go past this gorgeous 15 -minute recipe.
- 1 orange, juiced
- 1 tablespoon white wine vinegar
- 2 tablespoons extra virgin olive oil
- 1 teaspoon wholegrain mustard
- 1 orange, extra, peeled, sliced
- 140g pkt Australian Chopped Kale
- 1 avocado, stoned, peeled, sliced crossways
- 1/4 red cabbage, finely shredded
- 4 red radishes, thinly sliced
- 2 Fuji apples, thinly sliced crossways
- 1/4 cup (35g) coarsely chopped pistachios
- Whisk the orange juice, vinegar, oil and mustard in a small bowl. Season.
- Arrange the orange slices, kale, avocado, cabbage, radish and apple on a large serving platter. Drizzle with the orange vinaigrette. Sprinkle with pistachios to serve.
