Pig candy
You will need:
100g of streaky bacon (slices cut into strips), 50g of brown sugar, a pinch of cayenne pepper, a pinch of ginger powder.
Preheat the oven to gas mark 6/200C fan. Line a baking-tray with baking-paper and put the bacon strips flat on it side by side. Mix together the sugar, cayenne pepper and ginger in a small bowl. Use a teaspoon to spread this over the bacon rashers. Try not to scatter too much of it on the parchment paper itself, because it will burn and blacken almost immediately. Bake the bacon in the middle of the oven for 10 to 15 minutes or until the sugar has melted completely and the bacon has gained some colour. Don’t leave the bacon unattended; it’s only a short moment from crisp to burnt. Immediately remove the tray from the oven, and quickly lift up the caramelized bacon slices using a spatula, before the sugar hardens again. These are best eaten when still warm, when the sugar has hardened a little.
