Posh ‘ftira, bajd u bacon’
For 4 people, you will need:
One large ftira (cut into four pieces), four eggs, a pinch of salt, eight slices of pancetta (no rind), 250g of mushrooms, 70g of butter, a handful of rocket (washed), freshly ground pepper, oil for frying.
Grill the pancetta slices until they are really crispy and leave them to cool. Break them into pieces on kitchen-paper to absorb the excess fat. Rinse the mushrooms and cut each slice down the length (around four slices to every mushroom). Sauté them in 50g of butter until they are soft, which takes seven to 10 minutes. Slice open the ftira pieces and toast the insides under a grill, then butter them. Divide the pancetta and mushrooms between them. Now fry the eggs, leaving the yolks intact but slightly runny inside. Place an egg inside each piece of ftira, on the other ingredients. Sprinkle on salt and pepper and add some rocket. Serve immediately.
