Pomegranate vodka jelly cubes
You will need:
150ml of pomegranate juice (see recipe for pomegranate jelly), 100ml of vodka, four gelatin leaves.
Soak the gelatin leaves in cold water for two minutes until they have softened. Warm up the pomegranate juice - not too much - and remove the pan from the heat. Squeeze out the excess water from the gelatin leaves and add them to the warm juice. Stir until the gelatin has dissolved. Add the vodka, stir thoroughly, and fill an ice-cube tray. Leave this to cool, then refrigerate (not freeze) it until the jelly cubes have set.
