Ginger and lemon granita

For 8 people, you will need:
300ml of fresh lemon juice, 300g of sugar, 1.7 litres of bottled water, a small piece of fresh ginger root.
Boil half of the water in a pan and grate the ginger into it, then turn off the heat. Add the sugar and stir until it dissolves. Leave the pan to cool, then pass the liquid through a fine sieve and discard the ginger. In a large sealable container, mix the gingered water, the other half of the water and the lemon juice. Put the lid on the container and freeze it. Every now and again, stir it well with a fork, so that it freezes into flakes and not one solid mass.
