Abobora frita (fried pumpkin)
You will need:
Pumpkin, water, salt, one egg, flour, olive oil.
Cut pumpkin into thin slices. Cut the slices again into pieces about 10cm long and 4cm wide. Soak them overnight in cold salted water. Beat an egg with a cupful of flour and a pinch of salt, making batter. Drain the pumpkin and pat the pieces dry with a cloth. Dip them into the batter, coating them all over, and fry them in olive oil, turning them as you do so.
