Smoked club sandwich

Bernard Muscat's wine recommendation: a Pinot Gris from Alsace/Germany, preferably a Vendange Tardive/Selection de Grains Noble - Hugel Pinos Gris Tradition (Wands).
For 2 people, you will need:
Three slices of white bread, three slices of brown bread, 50g of black or green olive pâté, three tomatoes (sliced), 50g of sun-dried tomato pâté, 30g of lemon mayonnaise, four slices of prosciutto cotto, 1 yellow pepper (grilled and sliced), 150g of goat’s-milk cheese log (sliced) – from a delicatessen counter.
Spread one white slice of bread and one brown with black olive pâté and arrange these on a serving-plate. Top them with rocket leaves, tomato slices and prosciutto cotto. Spread another white slice and another brown one with lemon mayonnaise - on both sides this time - and place the brown slice on the white one in the dish, and vice versa. On top, place more rocket and slices of yellow pepper and cheese. Spread the remaining slices of bread with sun-dried tomato pâté and place these on top. Serve immediately.
