Prawn and smoked salmon filling for sandwiches or baguettes

Bernard Muscat's wine recommendation: wines with a lot of character are needed to cope with the strong flavours of smoked salmon. A sparkling wine (Spumante) from Northern Italy - Martini Brut from Piemonte (P. Cutajar & Co.)
For 2 people, you will need:
Eight slices of dark brown bread or three brown or multigrain medium baguettes, three tablespoonfuls of cottage cheese, 150g of prawns (chopped), a few slices of cucumber, the grated rind and juice of half a lemon, a dash of teriyaki sauce to taste (optional), five slices of smoked salmon, two tomatoes (sliced), two tablespoonfuls of snipped chives.
Mix the cottage cheese and prawns together. Add the lemon rind and juice and taste. Add a little teriyaki sauce to taste if you are using this. Spread both sides of the bread with this mixture, and top with slices of smoked salmon, tomato and cucumber, sprinkled with chives. Serve immediately.
