Dates wrapped in bacon, stuffed with Parmesan
The quantities given here are for 20 pieces.
You will need:
20 dates (pitted), 50g of Parmesan (in 20 small cubes), seven rashers of streaky bacon (rind removed).
Stuff a cube of cheese into each date. Cut each rasher of bacon into three pieces and wrap each one tightly around the stuffed dates. Skewer them with a tooth-pick. Refrigerate for up to two days or freeze these until they are needed. Cook them at 180C for 15 minutes, or until they are caramelised. Serve them immediately they are removed from the oven.
