Tomato and basil tartlets
You will need:
Puff pastry, flour, fresh basil, olive oil, beefsteak tomato (tadam ċatt), Parmesan cheese, black pepper, sea salt.
Roll out some puff pastry on a floured surface, and cut it into rounds about 15cm in diameter. Roughly chop some fresh basil and toss it in good olive oil. Spread this over the pastry rounds. On top, place some slices of beefsteak tomato (tadam ċatt), and on top of that, a layer of Parmesan cheese shavings. Grind some black pepper over it all. Preheat the oven and two empty baking-sheets to gas mark 7/220C, then remove the baking-sheets from the oven, place the tartlets on them, and bake for 15 minutes or until the pastry is golden. When they are ready, garnish them with fresh basil and a little sea salt. Serve them piping hot with a green salad.
