Piri piri chicken with rocket, Parmesan and pine nuts
For 2 people, you will need:
Six tablespoonfuls of piri piri sauce, two chicken breasts (trimmed and sliced into strips), a bunch of rocket leaves, 40g of Parmesan cheese (shaved), 20g of pine nuts (toasted), three tablespoonfuls of olive oil, salt, pepper.
Marinate the chicken breasts overnight in five tablespoonfuls of piri piri sauce. Grill the chicken or cook it in a griddle pan. Mix the remaining piri piri with olive oil, salt and pepper. Pour this over the rocket and toss it. Sprinkle the chicken and rocket with toasted pine nuts and Parmesan cheese shavings. Serve immediately. You can cut the chicken into pieces before marinating it, then serving the cooked chicken pieces with the rocket in bowls.
