A warm prawn and orange salad

For 6 people, you will need:
30 prawns (shelled and de-veined), 50g of butter, the zest and segments of three oranges, the juice of one orange (strained), half a red chilli (finely chopped), six tablespoonfuls of olive oil, 500g of mixed lettuce leaves (washed and dried), salt and ground black pepper.
Make a dressing by mixing the olive oil and orange juice and seasoning it with salt and pepper. Melt the butter in a pan and add the orange zest. Heat this through and add the prawns, cooking them until they turn pink. Remove the pan from the heat, pour in the dressing and stir it thoroughly. Mix this into the salad leaves, put in the orange segments and chilli, and mix it again. Serve this immediately, garnished with orange zest and with a sprinkling of black pepper.
