Risotto all’aceto balsamico

This is a famous recipe from Modena.
For 4 people, you will need:
320g of risotto rice, fresh cream, some onion, Parmesan cheese , dry white wine, half an apple, traditional balsamic vinegar of Modena, meat stock, olive oil, butter.
Brown the onion in the extra virgin olive oil and toast the rice in this, sprinkling it with the wine. Cook the rice by adding the stock a ladleful at a time until it is all absorbed and the rice is just right. Half way through the cooking, add the diced half apple without the peel together, together with some fresh cream. Thicken the cooked rice with butter and Parmesan cheese. Serve it with aged balsamic vinegar on top, to be stirred in by the individual.
