Cinnamon and lemon biscuits

You will need:
100g of butter, 100g of caster sugar, 150g of flour, the grated peel and juice of one lemon, two teaspoonfuls of ground cinnamon, the yolk of one egg, a little milk.
Pre-heat the oven to gas mark 5/ 190C. Cream the butter and sugar together until light and fluffy. Beat in the grated lemon peel, cinnamon and flour, and then add the yolk and enough milk to make dough. Knead this briefly and cut it into about 20 pieces. Cut each of these into eight further pieces and roll them into balls. Arrange them into rings with the dough-balls touching each other, on a well-greased baking-tray. Bake them for around 20 minutes, or until they are golden. Leave them to cool. Make some runny glace icing by stirring icing-sugar into lemon juice. Dip the cooled biscuits into this, sprinkle them with a little ground cinnamon and leave them to stand until they are firm.
