Thyme biscuits

You will need:
250g of plain flour, 125g of caster sugar, four teaspoonfuls of thyme leaves, 125g of butter, one egg.
Using a pestle and mortar, crush the thyme leaves with a spoonful or two of sugar. Add the mixture to the rest of sugar. Put the flour in a bowl, add the crushed leaves and sugar and stir. Add the butter and rub it in until it resembles breadcrumbs. Bind this with the egg and a little water to make dough. Leave it to rest for 30 minutes, then roll it out to about a centimetre thick and cut it into shapes. Preheat the oven to gas mark 5/190C. Lay the biscuit shapes on a well-greased baking-tray and bake them for about 25 minutes or until they are golden. Remove them from the tray and place them on a cooling-rack. Make some thick glace icing with icing-sugar and hot water and drizzle this over the biscuits. Immediately scatter them with some thyme leaves and lavender flowers and leave the icing to set.
