Melon sorbet and fresh melon
For 4 people, you will need:
Three small summer melons (one for the sorbet), 325ml of bottled water, 125g of sugar, the white of one egg.
Set two of the melons aside. Cut one of the melons in half, remove the pips, and peel it. Chop the flesh. Put the sugar and water into a saucepan and heat it until the sugar dissolves. Once the sugar has dissolved, bring the mixture to the boil, turn down the heat, and leave it to simmer uncovered, without stirring, for about five minutes. Pour the mixture into a shallow bowl, cover it with foil, and freeze it for about three hours. Then whisk it with an egg-white until it is smooth, cover it and freeze it again until it is firm. Serve the sorbet with delicate slices of melon.
