Roast potatoes

For 1 person, you will need:
Two or three medium potatoes, an onion, a couple of garlic cloves, fennel seeds, coriander sees, water, olive oil, salt and pepper.
Peel and slice the potatoes, onion and garlic cloves. Toss them together in an earthenware oven-dish with fennel seeds, coriander seeds and a little water. Pour on lots of olive oil, salt and pepper and roast them for 90 minutes to two hours in a medium to hot oven.
