Fried peppers
You will need:
10 orange peppers, eight cloves of garlic (peeled), six tomatoes, fresh basil, one teaspoonful of sugar, two long chillies (sliced), olive oil, salt and pepper.
Wash the peppers and cut them in half, removing the white membranes and seeds. Cut them into slivers. Blanche, skin and deseed the tomatoes and cut them into slivers. Crush the cloves of garlic and start to fry them gently in some oil, adding the peppers and chillies. Continue frying until they begin to soften, then add the sugar and the tomatoes and let them stew until they are soft and juicy. Add salt and pepper and leave them to cool. Serve them at room temperature, scattered with the basil leaves.
