Pizza bianco
You will need:
40g of mascarpone, 20g of pecorino (shaved), 50g of button or Portobello mushrooms (thinly sliced), some olive oil infused with garlic, rosemary and lemon (recipe given in this feature).
Lightly oil a baking-tray. Using your finger-tips, carefully press out a dough-ball, so that you have a pizza-based that is 5mm thick. The edge should be slightly raised. Spread the mascarpone over it and scatter this with the pecorino and mushrooms. Drizzle on the flavoured oil and cook the pizza at 250C/gas mark 8 for 10 minutes or until it is golden. Serve immediately drizzled with more of the flavoured oil.
