Specialities from Modica

Bartolo Turla and his mother Francesca Garofolo, who own the Hosteria San Benedetto in Modica, specialise in the traditional cucina baronale (baronial cuisine) of old Sicily – the sort of food that would have featured in the lives of the characters in Giuseppe Tomasi di Lampedusa’s ll Gattopardo. They have adapted old family recipes to pleasurable effect, and in their dining-room a ceaseless procession of little dishes of treats moves between the tables. Here are some of their recipes.
