Martini Bianco– the classic aperitif, vermouth from Torino. Serve it chilled in the summer, in a glass tumbler with plenty of ice. Some people like it with lemon. |
Canti Chardonnay Pinot Grigio– a light white wine to go with the clams. Serve it straight from the fridge. |
Los Monteros– a good red Spanish wine from Valencia. It should be served at room temperature, but that doesn’t mean the temperature of a hot June day. Pop it into the fridge for 20 minutes before serving it in the summer. |
Sfusati Limoncello– definitely best served cold from the fridge in the summer, with or without chunks of ice. To really chill it well, put it into the freezer for a couple of hours before serving it. Don’t worry – the alcohol will stop it freezing solid. |
