The first of the summer barbecues

Nick Camilleri Preziosi and Alex Mattei have come up with this mouth-watering summer barbecue, which is matched with wines chosen by P. Cutajar & Co Ltd. The quantities here are enough for six people.

All of these drinks, and many more, are distributed by P. Cutajar & Co Ltd, Notabile Road, Mriehel. Call 21 448 466 for information about stockists, or email cattard@pcutajar.com.mt

Martini Bianco
– the classic aperitif, vermouth from Torino. Serve it chilled in the summer, in a glass tumbler with plenty of ice. Some people like it with lemon.
Canti Chardonnay Pinot Grigio
– a light white wine to go with the clams. Serve it straight from the fridge.
Los Monteros
– a good red Spanish wine from Valencia. It should be served at room temperature, but that doesn’t mean the temperature of a hot June day. Pop it into the fridge for 20 minutes before serving it in the summer.
Sfusati Limoncello
– definitely best served cold from the fridge in the summer, with or without chunks of ice. To really chill it well, put it into the freezer for a couple of hours before serving it. Don’t worry – the alcohol will stop it freezing solid.
