Maltese Almond Wedding Cake

    • I happened to come across your website when I was searching the internet for a recipe. I live in Canada, but got married in 1970 in Malta. I never liked the usual dried fruit wedding cake and when I got married the caterer made me an almond wedding cake (and it was delicious). I have tried (but failed miserably) to find the recipe for this cake. I searched this site and found that Matty Cremona has a recipe for an almond cake (Issue 5 - June 2005). I was wondering whether this is the same recipe as the almond wedding cake. If not, do any of your contributors have the recipe for the wedding cake. If yes, would he/she be kind enough to e-mail me the recipe? I enjoy baking(especially Maltese traditional cakes and biscuits, etc. for Easter and Christmas) and my Canadian friends look forward to my baking.       I'm not sure what your almond cake wedding cake was like but if it is anything like the usual delicious almond wedding cakes I always enjoy at wedding then my cake is similar - sometimes there are whole almonds in wedding cakes or cherries but I prefer mine plain. if you try my almond cake recipe you might find it very similar to the one you remember with so much happiness.       Thank you very much for your quick reply. My wedding cake did havea few cherries in it (caterer said it made it look nice, but he cut the cherries in half so that it was easy enough for me to remove them). I will try your recipe this weekend and will let you know the results.

    • Matty....as promised I baked the almond cake and the results were just great. It came out to be a very moist and "tender" cake. My husband said that it took him way back to when we were married. It also passed the test of my son (he is an executive chef). So there you go.....an excellent recipe. Once again, thank you.
