    • Can I please have the basic recipe how to cook Mediterranean King Prawns. And what do I serve with them? Many thanks and congratulations for such a first class and informative website. Well done!

    • Michael, if you enter Prawns into the search-box at the top of the page, you'll get lots of prawn recipes. Those lovely red Mediterranean prawns, though, are best savoured as simply as possible. Wash them thoroughly, changing the water several times, because they are sometimes doused in chemicals to stop them darkening before they are sold (my fishmonger gave me this advice). You can either cook them under the grill, turning them a couple of times, or toss them in a hot pan. They cook in just a couple of minutes. Anything more than that and they will turn soft and 'cotton-woolly'. You can add a dash of whisky to the pan, or a splash of white wine and a bit of olive oil, and perhaps just a touch of chilli. Serve them with some rice or mixed leaves. If you're cooking lots of prawns at once, for a large group, use a very large pan, something like a smaller paella pan or even a big wok. I hope this helps. If you have any further questions, just post them here.

    • Hi there,

A good way to eat fresh mediterranean king prawns - is to wash them as Daphne suggested, peel, place on a plate and marinate them in some olive oil, Lemon juice, lemon zest, sea salt. Keep in fridge for 10 minutes and enjoy with a fresh rucola

    • I've been told that some of the large red prawns on the market right now are not Mediterranean prawns at all, but are imported from Chile. If you have carbon-footprint concerns, check with your fishmonger before buying.
