FIRST OF ALL I WISH TO CONGRATULATE YOU ON YOUR WEBSITE. I AM ONE WHO COLLECTS THE TASTE BOOK AS I AM VERY INTERESTED IN COOKING AND BAKING. CAN I PLEASE HAVE A HOME MADE DIABETIC RECEIPE AS I DO NOT LIKE BUYING THE READY MADE ONES. THE ONLY PROBLEM I DO NOT HAVE AN ICE CREAM MACHINE.

Ice-cream must always be sweetened in some way, and most of the recipes we researched on the internet use sugar substitutes like Sweet 'n' Low instead of sugar. We have trouble recommending the use of this sugar substitute as recent studies have indicated that it might actually be far more dangerous to health than the sugar it substitutes, in some people. Also, it all depends on what sort of diabetes we are talking about here. The fruit used in many ice-creams is packed with sugar, so substituting the refined sugar component is not enough. You also have to avoid including fruit with the more problematic type of diabetes.
We do not have a nutritionist on our team as we do not deal with specialised diets, so we would feel irresponsible recommending something that might turn out to be not quite right. I would suggest consulting a nutritionist who specialises in helping diabetics. Your doctor will be able to recommend one.
