Hi, I have high cholesterol and also need to stay away from dairy products for the time being, so does anyone have a suggestion for a good subsitute for coconut milk (which, while not being a lactose product, is high in cholesterol)? I wouldn't like to give up on Indian curries for which this ingredient is practically a staple! Thanks :)

You can use a mixture of nonfat yogurt and skimmed milk. Mix them well together, and then add them to the curry once it's removed from the heat and just before serving. It's not as sweet and creamy, but you avoid the cholesterol problem. Some people add a drop or two of coconut essence to the dairy mixture.
