Ann Gatt and Sylvana Psaila
Ann Gatt and Sylvana Psaila are friends who were driven by their sweet tooth to exchange recipes, and to occasionally meet in each other’s kitchens and try out new ways and methods with sugar, flour, eggs and butter – pleasures that only the new Puritans would seek to rule out of life completely.
Last year, they tried their hand at American cookies and muffins – biscuits and cup-cakes in English terminology – and they were such a success that the friends who ate them began to place orders for more. Ann and Sylvana then added to their order repertoire with cakes and desserts, and their biggest sellers are tiramisu, cassata Siciliana (featured here), profiteroles and diplomatica. “Our greatest pleasure is when people call back to say how good the cakes were, and then go on to re-order, or to recommend us to others,” Sylvana says. “We now work on our cakes around four mornings a week, and still enjoy it tremendously.”
