Piri piri prawns

A work-day supper


Four tablespoonfuls of piri piri sauce, one tablespoonful of olive oil, 12 king prawns, the juice of half a lime (or use a lemon), a teaspoonful of chopped coriander, salt, pepper, crusty bread.

Put a frying-pan (no oil) over a high heat and heat it up thoroughly. Then put in the olive oil, heat it up without burning it, and put in the prawns with the shell still on. Cook them for a minute on each side, and add the piri piri, lime/lemon juice, coriander, salt and pepper. Coat the prawns with the sauce and serve them immediately with crusty bread.
